You are not alone

If you’ve been telling friends and family about your crazy goal to quit your job and travel the world while your business runs itself…all by the end of 2012, you have probably gotten a few strange looks. People probably think you’re crazy and that your idea will never work. Well, they are unimaginative and jealous. Don’t listen to them or let them get you down. You are doing something AWESOME!

I highly encourage you to continue with your business building and creation, but also take time to reconsider WHY you are working so hard toward your goal. Reaffirm your goals and dreams and tell all your haters to skeedadle! Yes, that is your homework for today.

Not surprisingly, the first group did better than the other two by an average of 10 points. The e-mailers, on the other hands, did worse than the stoners by an average of 6 points [10].

Keep Your Daily Motivation Going

As an entrepreneur, there’s often times a ton of stuff that needs to get done EVERY SINGLE DAY – and that’s just before breakfast! When there’s so much to do, it’s often hard to get going. Partly for me, I have trouble getting going because I’m not always sure which direction I need to be going in. Should I be focusing on creating my product or should I be marketing my services, or calling prospective clients or business partners, or should I be at a networking event. And to add to all of that the distraction of running 2 blogs, 2 Facebook accounts, and a Twitter account. When I think about all that I need to be doing, my brain nearly explodes. Do you ever feel this way? I can’t be the only one, right?

I’m working on creating daily to-do lists to keep my thoughts in order and to prioritize my daily tasks so that I’m constantly working toward my business goals. But lately, even with my to-do lists, I’m still feeling unmotivated. I’m slightly overwhelmed with a task that I’ve given myself (even though I’ve broken it down into the tiniest of steps) and I just can’t bring myself to complete the task. I have however; found about 26 other things to do so I’ve felt very busy the last few days although nothing has really gotten accomplished.

Needless to say, my motivation level isn’t running at its highest. So, to combat my lack of motivation, I wrote these short tips on how to stay motivated in your daily life. I’m mostly posting this to get myself motivated, but I hope that it gives you a little get-up-and-go too! Through my lack of motivation, I hope to motivate you. Ironic, huh?

One of the biggest problems that many people face in their lives is their lack of daily motivation especially when they are actually trying to better themselves.  For many people it is an easy problem to face and they will know how to combat it, but for others they need a little help in order to get things kick started.  Below I’ve provide some ways in which you can help to give your motivation on a daily basis a kick start.

1.  Desire.  Many people find that by seeing the rewards they will receive often motivates them to get on with the many tasks in hand that they face on a daily basis.

2.  Energy.  Every one needs energy and having more helps you to face the day much better so get plenty of sleep, exercise on a regular basis and eat energizing foods.  Certainly cut back on the sugary foods as they will help to kill your motivation before it has even got going.

3.  Your Mental State. Having the right kind of mental state will help your motivation levels stay high.  It is important that you try to let the negative flow out and the positive rush in.

4.  Take things one step at a time.  Where motivation is concerned it is better if you do things one step at a time rather than trying to do everything at once.  Often you will find that by splitting up a task in to much smaller units of work you will find that you are more motivated to complete each task more quickly and efficiently and soon you will find that you have completed the whole task in no time at all.  Also, it’s OK if you need to break away from the task in hand and go back to it when you feel refreshed.

Hopefully the tips provided above will soon get your daily motivation levels up and running. I know that I’m feeling more motivated.

Over the last few weeks, Starbucks has been the target of a boycott by NOM over their support of Washington’s Gay Marriage bill. I’m not here to debate gay marriage, I’ll leave that up to the politicos. As a business owner, I want to talk about whether corporations should even be taking political stands.

Everyone Makes Mistakes

You must try in business to be successful, even if that means failing a few times.

One of my biggest fears while growing my business and my reputation as a smart business owner was making a mistake that would make me look dumb or incompetent. This fear held me back in many ways and I feel like my growth and my business’ growth was stunted.

Over the last few months, I’ve been working on overcoming my need for perfection. Realizing that even the largest corporations make mistakes has really helped me learn that it’s OK to not be perfect all the time. Although I am still a recovering perfectionist, and I haven’t completely overcome my fear I am learning more and more every day to take bigger risks and be OK with “failing” because you can’t succeed if you don’t try.

Positive Thinking Is The Key To Success

As a passionate entrepreneur, I am 100% driven by my positive attitude. I have developed an unstoppable positive mindset that helps me build my business and make my dreams a reality. I have almost made it a game to see how I can creatively shrug off negative comments and turn them into positive support. For instance, a real estate broker once said to me “Good luck on getting people to stick to their budget. Like that’s gonna happen.” Instead of letting him have it, I simply replied, “Thank you so much for wishing me good luck! I really appreciate the support! And good luck to you too!” Then, I just smiled and turned around. I chuckled at his comment and kept telling people about my awesome budgeting business.

I’ll be honest though, I had to work really hard to become so positive. It was a daily battle of constantly affirming my positive thoughts and letting the negative go. I learned to smile more and compliment others on their accomplishments. After a few months, my positive mindset started to stick and it came naturally. I was actively working to achieve my goals and that made me incredibly happy, so why would I want to think negatively.

Now, I instantly notice whether someone has a positive mindset or not. I notice the subtleties of their negativity and unhappiness and I just keep going with my overly enthusiastic positive attitude, hoping it will rub off.

In hopes of helping you develop an unstoppable positive mindset, I want to share with you a 7 day positive thinking challenge. If you complete these 7 steps, I promise you will be more energized by your positive thinking than you could ever imagine! I challenge you to try it. What’s the worse that could happen, you might smile more?

Day 1. Unearth your passion and create a plan to live your life in line with your passion. A lot of unhappiness stems from not following your passion, so spend an hour or so to sketch out a plan that helps you move your life to be more in line with your passion. Start by writing down your passion. Then write out 3 ways you can explore that passion within your current schedule. Finally, think BIG and write down your ideal life path that leads to you pursuing your passion every day. Take actionable steps each day to move toward that plan.

If you sell insurance, but your passion is animal rights, you could create a plan that makes time each week to volunteer with the local animal shelter or animal rights organization. Even though 100% of your time isn’t dedicated to your passion, at least you are actively spending time fulfilling your passion.

Day 2. Make a commitment to yourself and 1 person you trust that you will actively begin working toward your passion and doing so with a positive mindset. Being accountable to yourself and your friend will help you easily let go of negative thinking because you will remember your promise every time a negative thought starts to creep in your mind. During your week long challenge, check in with your friend every day. After the end of the week, be sure to check in once a week, not only will you find it refreshing to have an accountability partner, but you will also gain a stronger friendship which will help increase your positive thinking!

Day 3. Live in the moment and accept that each moment is perfect, regardless of the perceived outcome. Life is amazing and unpredictable, don’t miss out on its incredible moments by dwelling on something bad that happened in the past. Today, I challenge you to think about every moment as being a positive experience. You can either think that it is positive because you learned something from it or that it is positive simply because you had the opportunity to experience it.

Day 4. Be grateful. Be grateful for your health, wealth, friends and the help you receive whether you have an abundance or are lacking. If you start to foster a grateful attitude something amazing happens; you begin to receive more of that for which you are grateful. Stop asking for more and feeling sorry for what little you have and switch your attitude to being thankful and you will start to manifest positive thinking around your lifestyle. Slipping into neediness will become less of a habit when you repeatedly shift towards gratitude, away from poverty consciousness. Today I challenge you to take a moment to think about all of the amazing things in your life and affirm with yourself how grateful you are for each of those blessings.

Day 5. Take responsibility for your actions. Instead of blaming everyone around you for your problems, start taking responsibility for your life. If you have a mediocre job, there may be lots of circumstances that contributed to that, but only you can choose to stay stuck in that job or actively work to better your situation. You’ll be amazed at how empowering it is to know that you are the only person who can decide if you fail or succeed. Today, determine what one aspect of your life makes you the most unhappy and take responsibility for being in that unhappy situation. Let the anger and frustration go, and create a plan for how to improve your situation.

Day 6. Laugh, especially at yourself. Stop taking everything so seriously. Smile more and find silly reasons to just laugh out loud, you will instantly feel more positive. Life has so much to offer so don’t waste your time moping around in self pity.

Your challenge for today is to think of an embarrassing or negative event in your life and turn it into a funny story. For example, a few years ago during the Christmas shopping season I was at the mall, heading down the escalator in the food court. There were literally hundreds of people in the food court, and all of a sudden the heel of my shoes slipped and I went tumbling down the last 5 stairs…in front of everyone! And it wasn’t just a simple fall, no, it was an arm waving, feet over-the-head cartoon style fall. I turned about 8 shades of red, and after I was able to stand up I bolted for the nearest exit with a group of kids pointing and laughing. I am so thankful that social media was not popular back then because I would have been an instant Youtube blooper.
I tell this story all the time when someone accidentally slips or just needs to feel better about them self for doing or saying something silly. I can laugh at myself and by using this story I deflect someone else’s embarrassment; it’s a total win-win. Try it, create your own funny story that you can tell to others or just use to cheer yourself up when you’re slipping into a negative moment. Always remember that humor is very attractive, very passionate. People love funny people

Day 7. Believe that you control your destiny. If you want it and work hard, you can make it happen! Think big and create the life of your dreams; you have the power. Whether you are young or old, rich or poor, you can take control of your life and accomplish amazing things. Having this mindset will allow you to easily brush off negative thoughts because you know you have the ability to adjust your life’s course and work toward your ideal life.

Today, create your ultimate short-term goal. What do you want to have happen in your life this year or next year? Write it down in a place that you will see every day. Work everyday to make your goal a reality. And don’t forget to share your goal with your accountability partner.

If you start to think that your goal is impossible to reach, pick up a copy of ”The Slight Edge” and learn how the power of your actions compounds to create something amazing and help you reach your goal. In fact, this book is so powerful I recommend you read it right now, so you can think about its powerful message each and every day.

At the end of your 7 day journey, you will begin to enjoy your overall positive attitude and you will seek out that “high” that you get from positive thinking. You will probably also start to notice that the people around you are more positive too because positive thinking is infectious.

As an ending note – I also recommend that you start talking about other people in a positive light. Stop gossiping or bad mouthing other people, because what you say about others will eventually be what is said about you; do you want positive things spread about you or negative gossip? Congratulate people about their successes, compliment them, encourage them and you will start to receive the same treatment.

Welcome!

Welcome to the new and improved Penny Wise! If you haven’t visited in a while, it probably looks a little different. When I, Staci Dennett, started Penny Wise in June 2011, I wanted to help women gain financial independence through money coaching. As I grew my money coaching business, I started speaking to groups of women entrepreneurs about how they could harness the power of their money to grow their businesses. As I started meeting more and more small business owners and hearing about their struggles with starting and running their businesses, I realized that my true passion was for Fempreneurs (female entrepreneurs) and helping women start and grow their businesses.

Very Pinteresting: Harnessing the Power of Pinterest for Your Online Store

This Pin brought over 30 new visitors to my website in less than 2 hours.

“Addicting,” “daily habit,” “harder to quit than crack;” any social platform that is described with these words is probably a great place to promote your online store. Of course, I’m talking about Pinterest and those are actual phrases I’ve heard people use when talking about their Pinterest addiction. If you are a female between the ages of 24-55, I would be willing to bet money on the fact that you are an avid pinner with at least 3 craft boards, a wedding fantasy board, a books I love board, and a DIY cleaning board. You probably feel like your time on Pinterest is a fun waste of time, but if you own an ecommerce store, you could turn your addiction into big money.

Here are 5 things you should be doing to make your ecommerce store more Pinteresting:

1: Make it pretty. Create a well-designed Pinterest profile that engages users the moment they land on your profile page. At a minimum, you should have a fun profile photo, an enticing bio and 5 pin boards that are appropriately labeled. If you have more than 5 pin boards, rearrange your boards so the top 5 most intriguing boards are at the top. When pinning your products, make the pictures look as pretty as possible. You want to excite your followers to either repin your picture or click the link to find out more about the product. Pinterest is very visual so the more attractive your pictures, the more likely they’ll be to stand out in the crowd.

2: Use your words. When pinning items from your website give an interesting, keyword-rich description of the item so that it engages pinners and also shows up better in search results. To take your profile to the next level of awesome, create a thorough description of each of your pin boards as well as individual pins so users and search engines find your pins easier. Be careful to not fill your pin description with a bunch of hashtags though. Nobody finds #purple #unicorn #gift #interiordesign interesting or easy to read. However, if you can naturally fit a hashtag in the description of your awesome #homedecor pin, then by all means, do it.

3: Be social. Pinterest is a social network and should be treated as such. Don’t simply pin your products and hope that people will click and buy. Engage your followers by commenting on and liking their pins. Take your social engagement to the next level by connecting with your followers on Twitter or their blog or fan page if they have one.

4: Avoid a lawsuit. Notice how I didn’t say repin your follower’s pins in the suggestion above? As I’m sure you know, brands are weary of using Pinterest because of possible copyright infringement lawsuits. Even with the new Pinterest terms of use, you should still be very careful about your pins. If you are pinning from your own website and own the content of your pins, you shouldn’t be worried about breaking copyright, but if you are repining other people’s pins, then I urge you to exercise caution. If you want to ensure you are 100% legal with your pins, before you repin anything click the link to the original post. If there is a Pinterest button on the page or if the original owner has given consent to post their content, then you should be good to go with repining. Yes, this takes a little extra time, but it sure beats getting caught up in a lawsuit you won’t win.

5. Create intrigue. Some of the most trafficked pins I’ve posted (30+ clicks in under 2 hours) have been simple pictures with an intriguing call to action as the description. For instance, we did a virtual makeover of a NYC apartment. I pinned the before picture with the description, “Is this what your New York apartment looks like? Click the pic to learn how we transformed this boring, white-walled apartment into a colorful space to call home.” Within 2 hours, over 30 people had clicked the pin. Why? Because the pin had a call to action (click the pic) and people instinctually want to see the after pictures. This technique probably won’t work with every pin you post, especially if you are posting a lot of product pictures, but it can work well with blog posts that lead back to your site. Try posting a pin with a call to action 3-4 times per week to gauge the response, you’ll know if you’re posting too many or too few and you can adjust accordingly.

Weekly Menu – February 12

25-Minute Tunisian Vegetable Couscous Recipe

Acapulco Chicken

Ingredients

  • 2 skinless, boneless chicken breast halves – cut into bite-size pieces
  • 1 tablespoon chili powder, divided
  • salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup chopped green bell pepper
  • 1/2 cup chopped onion
  • 2 jalapeno peppers, seeded and minced
  • 1 large tomato, cut into chunks
  • 10 drops hot pepper sauce

Directions

  1. Season chicken with 1/2 tablespoon chili powder, salt and pepper. Heat oil in a large skillet over medium high heat and saute seasoned chicken for 3 to 4 minutes, or until no longer pink. Remove from skillet with a slotted spoon and keep warm.
  2. In same skillet, stir fry bell pepper and onion until soft. Add jalapeno peppers, tomatoes, remaining 1/2 tablespoon chili powder and hot pepper sauce. Cook, stirring, for an additional 3 to 5 minutes; add chicken and stir fry for 2 minutes more.

Asian Turkey Lettuce Wraps

Ingredients

  • 1 large DOLE® Onion, chopped
  • 1 tablespoon peanut oil
  • 1 (20 ounce) package ground turkey
  • 1 cup bottled Thai peanut satay sauce, divided
  • 2 tablespoons soy sauce, divided
  • 1 tablespoon hoisin sauce
  • 1 medium cucumber peeled and chopped
  • 1/4 cup coarsely chopped fresh mint
  • 6 (10 inch) flour tortillas
  • 1 (6 ounce) package DOLE Butter Bliss
  • small fresh mint leaves (optional)

Directions

  1. Saute onion in peanut oil in large skillet over medium-high heat 3 to 5 minutes or until onion starts to soften. Add turkey and saute 7 to 8 minutes or until cooked through.
  2. Stir in 1/2 cup satay sauce, 1 tablespoon soy sauce and hoisin sauce. Add cucumber and chopped mint; heat until hot.
  3. Whisk together remaining 1/2 cup satay sauce and 1 tablespoon soy sauce in small bowl.
  4. Assemble each wrap by spooning about 3/4 cup turkey mixture on each tortilla and topping with salad and mint leaves if desired. Fold in sides of tortilla and roll up. Cut in half and serve with satay soy sauce mixture.

French Leek Pie

Ingredients

  • 1 (9 inch) refrigerated pie crust
  • 2 teaspoons butter
  • 3 leeks, chopped
  • 1 pinch salt and black pepper to taste
  • 1 cup light cream
  • 1 1/4 cups shredded Gruyere cheese

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Melt butter in a large saucepan over medium-low heat. Stir in leeks; cook, stirring occasionally, for about 10 minutes, or until soft. Season with salt and pepper. Reduce heat to low. Stir in cream and cheese, and warm through. Pour mixture into pie shell
  3. Bake in preheated oven for 30 minutes, or until custard is set and golden on top. Allow to sit 10 minutes before cutting pie into wedges.

7 Layer Tortilla Pie

Ingredients

  • 2 (15 ounce) cans pinto beans, drained and rinsed
  • 1 cup salsa, divided
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh cilantro
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 cup chopped tomatoes
  • 7 (8 inch) flour tortillas
  • 2 cups shredded reduced-fat Cheddar cheese
  • 1 cup salsa
  • 1/2 cup sour cream

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a large bowl, mash pinto beans. Stir in 3/4 cup salsa and garlic.
  3. In a separate bowl, mix together 1/4 cup salsa, cilantro, black beans and tomatoes.
  4. Place 1 tortilla in a pie plate or tart dish. Spread 3/4 cup pinto bean mixture over tortilla to within 1/2 inch of edge. Top with 1/4 cup cheese, and cover with another tortilla. Spread with 2/3 cup black bean mixture, and top with 1/4 cup cheese. Repeat layering twice. Cover with remaining tortilla, and spread with remaining pinto bean mixture and cheese.
  5. Cover with foil, and bake in preheated oven for about 40 minutes. Cut into wedges, and serve with salsa and sour cream.

25-Minute Tunisian Vegetable Couscous

Ingredients

  • 1 tablespoon olive oil
  • 1 red onion, chopped
  • 1 zucchini, coarsely chopped
  • 1 yellow squash, coarsely chopped
  • 1 carrot, coarsely chopped
  • 1 red bell pepper, coarsely chopped
  • 1 yellow bell pepper, coarsely chopped
  • 1/2 cup sliced baby portabella mushrooms
  • 4 cups vegetable broth
  • 1/2 teaspoon smoked sweet paprika
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • 1 tablespoon chopped fresh cilantro
  • 1 (16 ounce) can chickpeas, drained
  • 2 Roma tomatoes, sliced
  • 2 cups dry couscous
  • 1 teaspoon grated orange zest
  • 1 tablespoon grated Parmesan cheese (optional)
  • 1/2 teaspoon paprika (optional)
  • 1 tablespoon finely chopped toasted almonds (optional)

Directions

  1. Heat oil in large pot over medium-low heat. Place onion, zucchini, yellow squash, and carrot in pot and cook, stirring occasionally, until onions begin to soften and turn translucent, about 5 minutes. Stir in the red and yellow peppers and mushrooms; cook another 3 minutes. Vegetables should still be firm.
  2. Pour in the vegetable stock and season with paprika, cardamom, salt, and cilantro. Bring mixture to a boil; reduce heat to low. Stir in chickpeas and tomatoes. Slowly pour in the couscous; stir. Cover pot immediately and remove from the heat. Let stand, covered, for 5 minutes. Fluff couscous with a fork. The couscous should have absorbed about half the cooking liquid.
  3. Serve at slightly warmer than room temperature. Garnish with orange zest and the grated cheese, paprika, and almonds.

Weekly Menu – February 5

This week I had a total dinner disaster. I had a Chinese Noodle Chicken recipe lined up for the week so I could use up the broccoli, carrots and mushrooms I had left over from last week. I forgot to pick up Teriyaki sauce so when I went to make the dish, I had to improvise with the Chinese spices I had on hand, then for some reason the noodles wouldn’t cook. Needless to say, by the time the food was done, it was way too salty and the noodles tasted like chewy pieces of wheat. It was awful! So, we ended up using a Groupon and  went out for dinner.

Disasters like these are why I always pre-test the recipes I share with you. Rest assured that if I am sharing a recipe, it turned out well and it was easy to make. I am substituting the Chinese Noodle recipe with a kitchen approved Sweet, Sticky and Spicy Chicken recipe. Enjoy!

Monday – Honey Lime Chicken Wings I have a deep fryer because I love fried food, so I whipped these babies out in less than 30 min. The breading was very crispy and the sauce was good. I used it as a dipping sauce instead of a coating for the wings. You can do whichever according to your own tastes.

Ingredients

  • 18 whole chicken wings, split
  • 1/4 cup honey
  • 2 tablespoons fresh lime juice
  • 1 tablespoon grated lime zest
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup all-purpose flour
  • 2 quarts vegetable oil for frying

Directions

  1. In a large bowl, mix together the honey, lime juice, lime peel, garlic, salt and ground black pepper.
  2. Place the flour in a plastic bag and shake the chicken wings in the flour to coat.
  3. In a large skillet, fry the chicken wings in hot, 1 inch deep oil until cooked through. Place the cooked wings in the honey/lime mixture and toss to coat well. Serve immediately.

Tuesday - Creamy Chicken and Roasted Garlic Chili Rellenos Casserole  Chef Kirsten Helle is a rock star at turning bad-for-you food into delicious healthy meals. This is one of her recipes. It was very good and made yummy leftovers as well. Serves 4-6

4 eggs

3 Tb milk or water

2 cups shredded cooked chicken (from a rotisserie chicken if you don’t have any on hand)

1/2 cup sour cream – organic

1 cup Green/Tomatillo Salsa

4 garlic cloves, roasted, mashed (if you don’t have roasted garlic you can just add 4 cloves minced garlic you have sauteed in a bit of oil until softened)

1 cup shredded cheese (I used pepper jack cheese and cheddar, jack cheese is traditional, use what you like)!

Make the egg crepes. Whisk together the eggs with the milk/water. In a non-stick pan preheated over medium high heat add a bit of oil, wipe out the excess with a paper towel. Add 1 Tb of the egg mixture for each crepe, tilt the pan until the batter is spread out in a circle, very thin. Let it cook until it is very browned and almost cooked on the top, about 30 seconds. Carefully flip and let the other side cook for just  few seconds. Set aside, continue making more crepes (about 8-10). *Key – make sure your pan is nice and hot and the crepe gets browned, almost crispy on the bottom. If you not do this your crepe may break apart* Combine the chicken, sour cream, salsa and garlic, mix together. In the bottom of a casserole dish that has been lightly oiled, place a layer of your crepes. Top with 1/3 of the chicken mixture. Make 2 more layers. Top with the cheese. Bake at 425 for 20 minutes until golden brown and bubbly. Enjoy!

Wednesday – Midwest Brisket Ok, I cheated on this one. I bought a pre-marinated brisket so all I had to do was add the spices and cook it. It was yummy and I didn’t have to put too much thought into cooking it because I didn’t have to do the marinating. I served the brisket with a baked potato for a good Midwestern meal. Corn and mashed potatoes or green bean casserole would also be Midwest approved side dishes.

Ingredients

  • 4 tablespoons liquid smoke flavoring
  • 4 tablespoons Worcestershire sauce
  • 2 tablespoons garlic salt
  • 1/2 cup chopped onion
  • 2 tablespoons celery seed
  • 5 pounds beef brisket

Directions

  1. Combine liquid smoke, Worcestershire, garlic salt, onion and celery seed in small bowl. Place brisket in shallow non-metal dish, fatty side down. Pour marinade over meat; cover and refrigerate 8 hours or overnight.
  2. Preheat oven to 300 degrees F (150 degrees C).
  3. Remove meat from marinade and place in an ovenproof pan. Roast, fatty side up, 5 hours, until tender.

Thursday – Cobb Salad Simple and yummy. We used Turkey bacon, but I know many of you love the real stuff, so bacon away! Oh, and we also used Thousand Island and Honey Mustard dressing since we’re not huge fans of Ranch.

Ingredients

  • 6 slices bacon
  • 3 eggs
  • 1 head iceberg lettuce, shredded
  • 3 cups chopped, cooked chicken meat
  • 2 tomatoes, seeded and chopped
  • 3/4 cup blue cheese, crumbled
  • 1 avocado – peeled, pitted and diced
  • 3 green onions, chopped
  • 1 (8 ounce) bottle Ranch-style salad dressing

Directions

  1. Place eggs in a saucepan and cover completely with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  2. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  3. Divide shredded lettuce among individual plates.
  4. Evenly divide and arrange chicken, eggs, tomatoes, blue cheese, bacon, avocado and green onions in a row on top of the lettuce.
  5. Drizzle with your favorite dressing and enjoy.

Friday – Sweet, Sticky, Spicy Chicken Unlike the Chinese Noodle fiasco, this recipe is not salty and chewy. It’s a simple Asian chicken dish that’s quick and can be served with rice for a complete weeknight meal.

Ingredients

  • 1 tablespoon brown sugar
  • 2 tablespoons honey
  • 1/4 cup soy sauce
  • 2 teaspoons chopped fresh ginger root
  • 2 teaspoons chopped garlic
  • 2 tablespoons hot sauce
  • salt and pepper to taste
  • 4 skinless, boneless chicken breast halves – cut into 1/2 inch strips
  • 1 tablespoon vegetable oil

Directions

  1. Mix together brown sugar, honey, soy sauce, ginger, garlic and hot sauce in a small bowl.
  2. Lightly salt and pepper the chicken strips.
  3. Heat oil in a large skillet over medium heat. Add chicken strips and brown on both sides, about 1 minute per side. Pour the sauce over the chicken. Simmer uncovered until the sauce thickens, 8 to 10 minutes.

February Challenge – Part 3

Whew! Can you believe that it’s already February 1? We are one full month into the fabulous 2012 year, and so far 2012 has proven to be all it  was hyped up to be. I hope that you can say the same.

Not only is today the first day of February, but it’s also the first day of your February Challenge! Yay! I am so incredibly excited about this challenge! As I mentioned in the first video, February’s challenge is probably going to be the hardest challenge I will every give you. Why? Because it’s the one thing financially that is so very personal and emotionally driven.

As you learned in the video yesterday, my #1 secret to financial success has been self love. So what exactly does that mean? Well, it means that I love myself and TRUST myself to make the BEST financial choices for my life. This trust has given me the strength to make some pretty tough financial choices that go against what was expected of me.

For instance, instead of staying the course on a career path that I HATED, but my family strongly approved of, I decided to quit my job and start my own business. A lot of people were very happy to give their opinion about my choice and they thought I was CRAZY, but I knew in my heart that it was the best choice for me. I trusted my self to make the right decision and I didn’t let other’s opinion of my decision deter me. THAT is what self love is all about.

Budgetista, I hope for you this same deep and everlasting self love for you! I want you to have the confidence to make the best financial decisions for your own life. Trust me, life is more fun when you stop caring so much about what other people think of you and you follow your heart because only YOU know what is best for your life.

Not only do I want your life to be filled with self love and confident money choices, but I want EVERY woman and little girl’s life to have that same blessing as well. I wish that every little girl could grow up knowing that she has the power and wisdom to make her life amazing. So please, share this same message of self love with your daughters (and sons, because they need to hear it too) and all of the young women in your life because they are not going to get this message from their friends, the media or their favorite movie star.

Now, for the Challenge!

For the month of February, for every single purchase decision you make, whether it’s a latte or a house, I want you to think about WHY you are buying what you are buying. Is there a reason you are purchasing that particular brand or product. Is it what you want to buy or do you feel as if it gives off a certain persona about you that you want others to like. And please, be honest. 

I want to share a little story with you. Before moving to Seattle, I had only had 1 cup of Starbucks coffee in my life. And, I thought it was the nastiest cup of coffee I had ever drank. I think my exact description was, “Putrid cup of over-roasted, burnt water.” I avoided the stuff like the plague.

Then, when I moved to Seattle, I received a Starbucks gift card as a thank you for volunteering. I thought that I would never use it and it sat around in my wallet for weeks. Until one drizzly (Is that a word?) Seattle day I walked by a Starbucks and decided to try a cup of their Caramel Macchiato. To be honest, the drink was only so-so, but it was how I FELT when I walked around with that cup in my hand. It was like I was a part of something bigger, some cool crowd that I was finally a part of.

I finally got it, I understood why people loved Starbucks so much! They make you feel like the successful, hip person you want to be. I mean, if you can afford a $3 cup of not-so-great coffee, you’ve made it, right? Well, that’s how I felt anyway and I wanted to continue feeling like that, so I continued to buy Starbucks coffee… a lot. In fact, I was a Starbucksaholic. I would buy up to 5 cups of coffee a week (that’s a lot for me) just so I could experience that feeling of inclusion.

That is, until I realized that I had gotten sucked in to a world of “buy me to be cool,” which is not a place that I like to hang out. I was wasting hundreds of dollars on coffee just to fit in, which is when I decided to host the Holiday Savings Challenge so I could ween myself off the “addiction”.

The moral of the story? It’s easy to get sucked in to a pattern of spending money in ways that are not beneficial to you, but somehow change the way people think of you. We don’t always buy things to get people to like us, sometimes it’s to impress them while other times it’s to make them jealous of us or some other superficial reason. And that’s the true moral; this superficial manipulation of people  to suite our needs only really hurts us in the end. A friend that likes you for your fancy house and car, really isn’t a very good friend at all, are they?
